Gin & Tonic Sill

Here is a recipe for a really good herring, G&T herring.

Do this:

Boil together 3 dl water, 3 dl sugar and 1 dl vinegar (12%). Remove the pan from the heat and add the following:

1 sliced red onion
1-2 sliced carrots
15-20 junipers
2 star anise
10-15 whole rose peppercorns

Let the team cool the fridge.

Then add zest from 1 lemon and 1/2 orange and juice from the lemon. 1 dl gin and 3-4 cl Tonic Syrup.

Cut up around 1 kg of pickled herring into lagoon-sized pieces and leave everything in the fridge for at least 24 hours.
